Chicken or Turkey Stuffing Casserole


"I've always loved turkey and stuffing and wanted it more often than just around the holidays. Now, I've started a tradition where I take the legs and wings from our Thanksgiving turkey and put them in a ziplock bag to freeze them. Then, a few months later I use them to make this recipe, add some mashed potatoes and a veggie and I've got the great taste of Thanksgiving again w/o all the fuss! The wings and legs of an 18-20 lb. bird will be plenty of meat for this recipe. Besides using leftover Thanksgiving turkey, you can also use one of those great rotisserie chickens from the deli."

  1. Preheat oven to 350 degrees
  2. Mix melted margarine and stuffing mix together along with all the dry ingredients: onion, celery and spices.
  3. Place 3/4 of this mix on the bottom of a 9x13 pan baking pan.
  4. Place chicken or turkey pieces on top of stuffing mix, then add mushrooms over the chicken
  5. Mix together: sour cream, soup and 1 cup of the chicken broth
  6. Pour mixture over chicken and stuffing mixture.
  7. Sprinkle remaining stuffing mix over the top.
  8. Pour the remaining broth over the top
  9. Bake 40-45 minutes
  10. Serves 6-10
