Wild Goose with Bacon Appetizer

"My husband and son are both avid waterfowl hunters. One particularly successful season we tried to come up with new ways to prepare the geese they shot. We came up with this, just in time for New Year's Eve and they were a hit! This year my son prepared these for our family Christmas Eve get together; the platter was empty almost before it reached the table."

  1. Cut the goose into thumb-sized chunks. Coat each piece with cajun seasoning by shaking in a plastic bag. Cut each slice of bacon in half and wrap one-half slice around each piece of goose, securing with a toothpick. Grill on a pre-heated grill on high a few minutes each side, just until the bacon is cooked. Serve warm.
