"This is a tweaked version of a few Minestrone soup recipes I found. There are many variations to this recipe. This one has no pasta and has red kidney beans and is a hit with my kids and adults alike. It can easily serve as a meal with some bread."

  1. Meatballs : mix hamburg, 2 cloves of minced garlic, 1 teaspoon each of oregano and basil, pepper, egg, bread crumbs.
  2. Shape 1 tablespoon of mixture into large olive sized balls and cook in a little oil for about 10 min or until browned, then set aside.
  3. In large pot sauté veggies and 2 cloves of the minced garlic in the oil.
  4. Add beef stock, tomatoes, sugar, 1 teaspoon each of oregano, basil , 1/2 teaspoon powdered cloves, bay leaf and bring to boil. Add the meatballs, red beans and simmer at least 1 hour.
  5. Serve with grated parmesan cheese.
