  1. Melt butter in pot over med-high heat.
  2. Add sliced celery, 3 cps diced pears, leek tops, bay leaves, and thyme.
  3. Cover; cook until celery softens, stirring occasionally, about 8 min.
  4. Toss in flour.
  5. Stir in 3 cps broth; bring to boil.
  6. Cover, reduce heat to med-low, and simmer until celery is tender, about 20 min.
  7. Remove bay leaves from soup.
  8. Puree soup in batched in blender until smooth.
  9. Return puree to same pot. Season to taste with salt and pepper.
  10. Thin with more broth by the ¼ cupfuls, if desired. Re-warm briefly.
  11. Divide soup among bowls; garnish with ½ cp finely diced pear and celery leaves.
