  1. Add oil to pan.
  2. Saute' onions and sun-dried tomatoes on medium heat till onions are translucent.
  3. Add thyme and cook 1min
  4. Add stock, salt and pepper. Cook for 30 minutes or until most of the liquid is dissolved.
  5. Pure' the mixture in food processor until the consistency of jam. Set aside.
  6. Cut the loaf into 1/2" pieces.
  7. Spread jam on one side of a single piece of bread.
  8. Cover with the jam with 1-2 pieces of cheese.
  9. Place another piece of bread over the cheese.
  10. Spread a small amount of butter on the outside of both pieces of bread.
  11. Place sandwich in skillet over medium-high heat until browned on both sides.
  12. Serve hot.
