"I wanted to make some cheese crackers to go on my Christmas tray for a diabetic friend. Most recipes call for a block of natural cheddar cheese. I live 12 miles from a grocery store and the wind chill is currently 12 below zero so I decided to "make do" with the 8 ounces of shredded, processed cheddar I had in the freezer. Naturally aged cheddar would probably give you a little more cheesy flavor. This recipe results in crackers somewhat like goldfish but with more "zing". I used my smallest cookie cutters (about 1") for fun Christmas shapes."

  1. Preheat oven to 375 degrees.
  2. In food processor, process frozen cheese to a small shred.
  3. In mixer bowl, cream butter, cheese and Worcestershire sauce until well blended.
  4. In separate bowl, combine flour and spices and gradually add to creamed mixture, blending well.
  5. Divide dough into 2 balls, wrapping one in plastic and refrigerating while you work with the other one.
  6. Flatten dough and roll to 1/4" thick and cut shapes with small cookie cutters. Keep re-rolling and cutting until all dough is used. Sprinkle some shapes with toasted sesame seeds as you prefer.
  7. If you prefer, you could form the dough into a log, roll in seeds and cut 1/4" thick slices.
  8. Bake on ungreased cookie sheet at 375 degrees for 10-12 minutes. Cool on cookie sheets for 2 minutes then remove to wire rack.
  9. Repeat with remaining dough.
