"This spin on traditional chili will have your mouth watering at any mention. Serve with big chunks of cheese and fresh naan or quesadillas! I usually make this a day in advance and dream about it until the next day."

  1. 1. Place pork roast, water and 1 diced onion in crock pot. Cook on low for at least 4 hours. The meat should be ‘stringy’ and fall apart with just a bit of pressure from a fork.
  2. 2. Drain the water and cut the pork roast into bite-sized pieces.
  3. 3. Place the pork roast and onions in a crock pot; add 1 chopped onion, the chilis, chicken broth, jalapenos, and cornstarch mixture. Add ½ tsp of salt to start out.
  4. 4. Cook on low for 4 more hours, until the soup thickens. Add salt to taste.
