"This is a recipe I made for my boyfriend's birthday, made with some of his favorite ingredients. I hope you will enjoy it as much as we did."

  1. Pie Crust
  2. 1. Preheat oven to 350 Degrees.
  3. -Place cookie crumbs, sugar, ground ginger & melted butter in the food processor bowl, or mix in a small bowl with hands, & blend until everything is fine granules.
  4. -Grease your pie plate with butter, then press the crust mixture into the bottom of your pie plate & up the sides. Bake UNFILLED crust for 10 mins.
  5. Pie Filling
  6. 2. In a bowl, combine sugar, cornstarch, lemon zest, vanilla extract & ground cinnamon. Gently stir in berries.
  7. - When crust is done, increase the oven temp to 425 Degrees. Poor the pie mixture into the hot shell & bake for 15 mins.
  8. Pie topping
  9. 3. In a small bowl, combine flour, brown sugar & cinnamon. Blend in the cold butter with a fork until mixture is crumbly, sprinkle over pie.
  10. - Reduce heat to 350 degrees & bake for an additional 40 mins or more.
  11. - Cool on a wire rack. Serve at room temp. Add whipped cream or vanilla ice cream if wanted or desired.
