Set-up smoker or grill with potatoes either directly on the coals or on a grate directly above. Smoke them until fork tender about 1 - 1 1/2 flipping as needed. Remove and let cool enough to remove the skins.
In a large mixing bowl, combine the remaining ingredients and spices, beat well. Pour into pie crust. Bake at 350 degrees F for 55-60 minutes.
For the Syrup
Heat pomegranate juice on medium high in saucepan and reduce to about 1/4 cup (should take about 5 minutes).
Add cinnamon and maple syrup and heat on low for about 10 minutes stirring frequently.
