  1. Mix all dry ingredients.
  2. To pumpkin mixture add oil, egg & milk, stir.
  3. Add in dry ingredients, mix til smooth.
  4. If using a nonstick mini muffin pan, spray oil and add about 1 tsp of mixture in each pod.
  5. Makes exactly 48 mini muffins. You can use muffin liners.
  6. Bake at 350 for 20 minutes in preheated oven.
  7. Let set 5 minutes and set muffins on cooling rack.


Great for breakfast or brunch!
