  1. Cook carrots in boiling water until just tender (15-30 minutes).
  2. Meanwhile, in a medium bowl, whisk together wet ingredients to form marinade.
  3. Pour carrots into a large bowl and allow to cool slightly. Add raw veggies and dry ingredients. Turn to coat.
  4. Pour marinade over vegetables and stir to coat.
  5. Cover and refrigerate overnight. If desired, spoon into mason jars and keep up to 2 weeks in the fridge.
