"I had been looking for a recipe for horchatta for a while and never found one to make me say "WOW that's good!". After going through tons of them and using bits and pieces from a few and adding a few personal touches I HAVE GOT IT!"

  1. Take your white uncooked rice and water and put in the blender. blend for 1 minute.
  2. Add cinnamon sticks to the blender and blend for another minute.
  3. Let mixture sit over night or at least 12 hours.
  4. With a very fine strainer, cheese cloth or reusable coffee filter strain the mixture into your pitcher.** I found that the reusable coffee filter was by far the best way to go. Throw the rice and cinnamon particles away once you strain out all the liquidy goodness.
  5. Add your cold whole milk & sugar (you may add a little less sugar but don't add any MORE than the reccomended amount).
  6. Add vanilla extract and mix it all together untill all the sugar has dissolved. Place in the fridge to chill.
  7. Serve over ice or very cold.
