  1. In a large soup pot, over low/med heat saute onions in cooking spray just until tender(about 10 min). Meanwhile, remove casings from sausage and crumble.
  2. Add broth,cauliflower and crumbled sausage to pot and bring to a boil. Lower heat and simmer.
  3. When cauliflower is nearly to your desired tenderness(about 15-20 min) stir in red peppers and milk and continue over low heat just until heated throughout.
  4. Stir in spinach and serve immediately.
