  1. Preheat oven to 350 degrees. Grease and flour a 9x13 inch pan. Prepare the cake according to the directions on the package.
  2. In a seperate bowl, combine ricotta, sugar, egg and vanilla. "Hand Mix" until smooth. Pour over the top of uncooked cake, and spread evenly.
  3. Bake at 350 degrees for 40-45 minutes, or until a toothpick inserted into the cake comes out clean. After cooled cake, top with confectioners sugar. Keep refrigerated.
