"I always frost this cake with a rich chocolate frosting. The combinatin of chocolate and mint is perfect for Christmas. If you prefer a subtle mint taste reduce the amount of peppermint extract to 1 tsp."

  1. Preheat oven to 350 F, grease and flour two 9" round cake pans.
  2. Combine flour, baking powder and salt, set aside.
  3. Beat togther butter, sugar, eggs, vanilla, mint extract and food colouring.
  4. Add flour mixture by thirds to butter mixture alternatley with milk, beating well after each addition.
  5. Divide batter evenly into the two pans.
  6. Bake 30 minutes in preheated oven or until a cake tester inserted into the middle of the cake comes out clean.
