  1. Preheat the oven at 350%. Take 1/2 of the diced garlic and ginger and saute with a little oil until softened. Set on the side and let cool. Lightly grease the bottom of a baking pan with oil to prevent burning.Lightly salt and pepper the salmon and put into the pan.When the garlic and ginger is cool rub it into the salmon and bake for about 12 minutes. While the salmon is baking prepare the hoysin plum sauce. Saute the remaining garlic and ginger in butter Add a splash of vinegar and let The vinegar cook off. Add the chili paste the oyster sauce bring back to a simmer. Add the hoysin and plum sauces and bring back to a simmer. Add some chicken broth to loosen up the sauce to a lighter consistency.Then add the soy sauce.When the fish is done after 12 minutes remove from oven and put the sauce on top and return back to the oven about 5 or 6 minutes. Remove Garnish with plenty of scallions plate and serve.
