"I created this recipe because it was difficult to find an all veggie pot pie. A very filling and delicious pot pie made in a vegetarian way with lots of veggies. Both my husband and I love it! I use a deep dish pie plate to accommodate all the ingredients."

  1. On medium heat, saute onions in butter until tender. Add the flour. Stir constantly for 3-5 mins. until mixture turns into a blond rue. Add broth and bring to a boil. Turn down heat and simmer for 5 mins. Add salt, pepper and thyme. Stir in vegetables. Squeeze to drain spinach. Put 1 pie crust in the bottom of a deep dish pie plate. Spread 1/2 of cheese on bottom crust. Add the veggie mixture. Top mixture with spinach and the rest of the cheese. Place 2nd pie crust over the top and seal the edges. Bake for 60 mins at 350 degrees or until top crust is golden brown.
