Let cream cheese thaw to room temperature. Blend cream cheese with Ranch salad dressing mix until smooth. With a spatula, stir in bacon bits, pimentos and 8oz of shredded cheese. Shape mixture into a ball by placing it into a bowl covered with plastic wrap and then using your hands on the outside of the wrap to form it. Remove plastic wrap and place ball on serving plate. Cover the outside of the ball with the remaining shredded cheese. Sprinkle with parsley, if desired. Refrigerate until set, usually overnight. Let the ball thaw about an hour before serving with crackers.
Tips: Be sure to use the Ranch salad dressing mix. The Ranch dip mix is too salty. Also, this recipe tastes so much better if you use real bacon bits or crumble your own bacon!
