  1. • Bring a pot of water to a boil (add salt if desired) - Slice the bell peppers (long way) down the middle to make 2 halves (take out seeds)- keep 1/2 of 1 red & 1/2 of 1 yellow (chop those for the mixture) and place the remainder in boiling water for about 8-10 minutes or until tender, remove from water and drain on paper towel.
  2. • In skillet over med heat, cook the turkey until brown and season with salt & pepper, drain and set aside.
  3. • Heat oil in skillet on med heat, add onion, chopped peppers and garlic - cook until tender. Add turkey, 1 cup rice, tomato sauce, stewed tomatoes & brown sugar - Mix Well.
  4. • Stuff the peppers with the mixture, garnish top with chopped parsley, place in microwave safe 9x13 dish - microwave for 6-8 minutes (about 1 minute per pepper) until its all heated through.
