  1. After your rice has cooled, separate the grains by rubbing it with a bit of vegetable or corn oil on your hands. Heat oil in large wok or skillet. Add pork, ginger and garlic. Keep it moving with a wooden spoon, but don't smash it. Add onion, celery and carrot, stir-fry for 3-4 minutes. Add red pepper and mushrooms and mix in. Add rice and continue to keep it moving. Gradually fold rice in and heat thru. Add soya sauce and stir in. Remove from heat and sprinkle green onions over top. Serve hot with Thai Sweet Chili Sauce
