  1. melt two tablespoonfuls of butter in a skillet
  2. add potatoes and peppers, cover and let soften. do not brown peppers
  3. when soft, beat eggs with salt and pepper
  4. pour eggs over vegetables and let set before scambling to make large curds.
  5. while still hot, pile onto crusty italian rolls, top with ketchup
