  1. Wait to cook the pasta until the filling is made.
  2. Chop and mix onion, garlic, spinach, egg, spices and herbs, cream cheese, parmesan cheese, and salt in a food processor.
  3. Put chopped mixture in a bowl and mix in mozzarella and ricotta.
  4. Cook shells and cool with running water. Remove from the pot by hand.
  5. In a large 13x16 baking dish put half of the sauce on the bottom.
  6. Put filling in a bag and pipe into shells one at a time.
  7. Place in baking dish filling side up.
  8. Put the remainder of the sauce on top.
  9. Bake 50 to 60 minutes at 350F.
  10. Sprinkle the 1/4c of cheese on top and let rest 20 minutes before serving.
