Lemon and Mascarpone Pasta Sauce


"This is a great quick and easy pasta recipe, and it is delicious! I found the recipe in a book several years ago, but haven't looked at the original recipe since. This is approximately the measurements I use, but everything (of course) can and should be tweaked to your tastes. I often saute some chicken to go in or with this dish."

  1. Combine all of the ingredients in a large bowl, and set aside to warm to room temperature. Or, to save time, (in a heatproof bowl) set the bowl of sauce ingredients on the pot of boiling water to warm the ingredients and melt the butter.
  2. Cook pasta. Drain well. Immediately add to the bowl with the sauce and toss until the pasta is coated. Best served immediately, with a little extra parmesan cheese on top!
