"I had a wonderful pumpkin bread recipe from my sister-in-law and have experimented with making it lower in refined sugar and fat. My family cannot taste the difference...these are addictive! Enjoy!"

12 servings yields 2 1/2 dozen minis, about a dozen regular muffins

  1. This is easily done with a spatula; no mixer necessary.
  2. Mix agave, applesauce, eggs and vanilla.
  3. In separate bowl, mix all dry ingredients thru pumpkin pie spice.
  4. Mix wet and dry ingredients, alternating with water.
  5. Add pumpkin, stir in chocolate chips.
  6. Pour into muffin pans prepared with baking spray. Bake at 325. Mini muffins take 15 minutes; regular 20-25.
