"After reading how good sweet potatoes are for us. I set out to find a fast easy recipe that was also delicious. My sister and I developed this tasty side dish. The cayenne pepper can be increased to taste. I have found these are even better reheated the next day so make a bunch!"

  1. After peeling and cutting your potatoes place in a bowl and drizzle with vegetable or olive oil, set aside. Mix brown sugar, cumin and cayenne pepper with a fork. Sprinkle brown sugar mixture over potatoes to coat. Spray baking sheet with cooking spray and lay out wedges. Bake at 350 for 10 minutes. Remove from oven and turn potatoes. Increase heat to 400 and cook until fork tender about 20 minutes. Enjoy
