  1. Preheat oven to 350 degrees F. Grease a 9x13 baking dish or spray with cooking spray.
  2. In a large bowl, combine butter and sugar, mixing well. Mix in beaten eggs. Stir in pumpkin.
  3. In a medium bowl, combine flour, pumpkin pie spice, cinnamon, and salt. Mix well.
  4. Add dry ingredients to wet, stirring until just combined. Stir in pecans.
  5. Bake in preheated oven 28-32 minutes, until edges are lightly brown and center is set, (it may look moist, but is not sticky when touched.)
  6. Cool completely.
  7. Beat cream cheese and butter together. Beat in powdered sugar and vanilla.


I cut this recipe in half. I used whole wheat white flour, organic egg and pumpkin, and homemade pumpkin pie spice. Freaking IN-credible. I had to wrap up the pieces I did not eat several times ...
