  1. Cube the tofu.
  2. Combine cilantro, garlic, lime juice and zest, soy sauce, brown sugar, cumin, and cayenne pepper.
  3. Marinate the tofu in this mixture anywhere from an hour to overnight, as much as you have time for.
  4. Once marinated, fry the tofu in the oil until browned on all sides.
  5. Serve over rice, if desired.
