Deviled Potatoes


"These potatoes are very cheesy, very garlicky, and VERY delicious. They come out looking like deviled eggs, hence the name. Also, these are pretty easy to make vegan, and still taste great. This recipe is from a LiveJournal community called bakebakebake."

  1. Put the potatoes in a pot of boiling water for about 10 minutes, or until fork-tender.
  2. Drain them and set aside while preparing everything else.
  3. Preheat oven to 350.
  4. Place the garlic in a saucepan and cover with the olive oil. Over medium-low heat, cook the garlic about 10 minutes, or until golden.
  5. Drain the garlic, and mash it with a fork, as smooth as you can make it.
  6. Combine the garlic, basil, mayonnaise, and cheese in a bowl (throw in some salt/pepper if you'd like).
  7. Now you're going to slice your potatoes in half, and scoop out the center of each half, to make little bowls. (Make sure you keep the shell intact.)
  8. Spray a casserole dish with non-stick spray, and place your potatoes in it.
  9. Put about 2-3 teaspoons of the filling into each potato.
  10. Sprinkle paprika over the filled potatoes.
  11. Bake 20-25 minutes.
