  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine oats, cocnut, pecans and yeast. Combine honey, olive oil and vanilla and stir into oat mixture. Cook for approximately 11 minutes on a lightly greased baking sheet, stirring as needed. Continue to cook to desired browness. Remove and stir in blueberries. Let granola cool thoroughly and store in an air-tight container.
