"Great Pumpkin Pie with out the soggy crust. My wife doesn't like pie crust so I came up with this. It's a family favorite, and the best part is how simple it is to make. Add whip cream or ice cream for a real treat."

  1. Preheat oven to 350 degrees.
  2. Spray a 9" pie pan with nonstick spray.
  3. Beat 2 large eggs to break the yolks and mix.
  4. Combine all ingredients in a bowl mix by hand or with a mixer.
  5. Bake 45-55 minutes or until a knife inserted into the center comes out clean.
  6. 6. Cool on a rack before cutting.
