  1. Remove stem and root ends from onion; cut in half lengthwise and thinly slice onion lengthwise so that it falls into slivers. Place them in the crock pot.
  2. Add the remaining ingredients in the order listed up to the dashed lines. Cook until the onions are soft and liquid is reduced by about a third.
  3. Mix in spinach. Cook for a few minutes just until wilted. Blend in table cream. Season to taste with salt. Cook, stirring, just until heated through - do not boil.
  4. Serve over brown rice or pasta of your choice.
