  1. Rinse lentils carefully checking for stones etc. Put in large dutch oven with thyme, coriander, cumin, and cayenne pepper. Bring to boil.
  2. Put onions in frying pan with 2 tbs butter. Caramelize with cinnamon, allspice, cloves and ginger.
  3. After lentils have boiled for a few minutes, add rice and allow to continue boiling. After a few more minutes add caramelized onions, apples, and sweet potatoes.
  4. Lower heat to simmer, cover and continue cooking until potatoes are soft and rice is cooked, about 45 minutes. If there is too much liquid left let simmer off to desired consistency.
