"A delicious main dish (I typically serve it for breakfast) made from an unusual but delicious combination of ingredients. Made with mild sausage, red bell pepper, onion, pumpkin and cheddar cheese--a great make-ahead meal."
Preheat oven to 350 degrees and grease a 13 X 9 inch baking pan. In a large skillet, brown sausage, peppers, onion and garlic for 8-10 minutes. In a large bowl, toss bread cubes, cheese and sausage mixture. In another bowl whisk eggs, milk, pumpkin and cheese. Add salt, pepper and seasoning. Fold egg mixture into bread mixture and transfer to prepared baking pan. Bake for 30-35 minutes or until puffed, golden and set in center. Serve warm or at room temperature.
