  1. Preaheat oven to 350.
  2. Beat butter and sugars.
  3. Reduce mixer speed to low and add salt, vanilla and eggs. Beat for about 1 minute until well mixed.
  4. Add flour and soda, mixing until just combined.
  5. Stir in chocolate.
  6. Drop heaping tablespoon sized balls, 2 inches apart on baking sheets lined with parchment.
  7. Bake until cookies are golden around the edges but soft in the centre (8-10 min).
  8. Let cookies cool for 2 minutes before transfering to cooling rack to cool completely.
  9. Store in airtight container up to one week.
