Kentucky Wonder Beans


"These are an old soul food heirloom favorite in the garden and what I remember eating frequently as a child. I grew the pole variety this summer and they are super prolific/ productive. They taste like nothing you buy in a store---super meaty, tender, long lasting flavor and now they are a favorite in my own family."

  1. Pinch or clip off the blunt ends of beans. Larger ones might need a partial stringing. Wash the beans. Drain.
  2. Put whole beans in a 1-quart saucepan. Do not cut them.
  3. Add 1" water,
  4. dollop of olive oil,
  5. 1-2 garlic cloves chopped,
  6. *1-2 strips of uncooked bacon for excellent flavor
  7. (I use Coleman's nitrate-free bacon from Costco or Virginia Ham from Whole Foods), *
  8. ½ tsp. sea salt or ¼ Knorr Vegetable bouillon & coarse black pepper to taste.
  9. (The beans will cook in this semi salty broth and won't be as salty as it the broth) Reach a boil, then cover & simmer on Medium heat for 7-10 min. or till tender.
