  1. To Prepare:
  2. 1. Put wine and water into pot or 7" saucepan, add the sugar and food colouring*, and stir till dissolved.
  3. 2. Boil steadily for 5 minutes until syrupy.
  4. 3. Peal each pear carefully, but retain stems. ( I also trimmed the bottoms so they were flat and guaranteed to stand )
  5. 4. Put the pears into the syrup and cook for approx 7 mins, basting and turning the pears constantly in the syrup.
  6. 5. Remove the pears from the syrup and put onto a cooling dish
  7. 6. Blend the cornstarch and 3 tbsp. water and stir into the syrup and boil, stirring well.
  8. 7. Spoon over the fruit and leave until set. Remove from plate and put on server or individual plates. decorate with whipping cream of choice.
  9. Chill before serving
