"I don't remember where I got this recipe, but I have been using it for decades. I have tweaked it a bit from the original(with rave reviews). My version is a lot less "fussy" than some Cajun seafood recipes."

  1. In a large saucepan, melt butter over medium heat.
  2. Add onion, bell pepper, and celery and saute until translucent.
  3. Add soups, paprika, seasoned salt, and pepper (if desired). Stir until well mixed and simmer for 10 minutes.
  4. Add crawfish tails with fat (the fat is very important to the flavor of the dish). Stir well.
  5. Add parsley and green onions; stir and simmer for 15 minutes more.
  6. Serve over rice.
