"This bread has everything you're looking for in a tasty snack or nutritious and delicious breakfast - tart blueberries, sweet banana, and a crispy exterior and luscious moist texture inside. This recipe can easily be transformed into muffins or smaller loaves just by adjusting the baking time."

  1. 1. In a mixing bowl, sift dry ingredients together - flour(s), baking soda, and salt - and set aside. In a separate bowl (or in the stand mixer), cream butter and sugars. Add eggs and mix well. Add sour cream, vanilla and banana and mix well. Slowly incorporate the dry ingredients, mixing just until combined. Fold in blueberries and pour into prepared (greased, non-stick spray or parchment) loaf pan(s).
  2. 2. Bake at a pre-heated 350 F degrees for 50-75 minutes (large loaf pan) until a bamboo skewer or toothpick comes out clean in the center. Baking times can be modified - half time for 2 smaller muffin pans or one quarter time for muffins. Allow to cool for 15 minutes and turn onto wire rack.
