  1. Preheat a non stick skillet on medium high heat. Carefully distribute the salt on the bottom of the pan. Lightly spray the fillets with non stick spray and season with pepper. place in preheated pan and roast/sear until browned for 4-6 mins. depending upon thickness of fillet. Reduce heat to medium-low and turn fillets. Pour in lemon juice and cover and cook an additional 4-6 minutes until cooked through. Serve and pour pan juices over fish.
