Mix all in a non-metal container, until salt is dissolved. Place Pork loin in brine and cover and place in refrigerator for 2-6 hrs. Preheat grill and sear loin on all sides and then move to indirect heat and cook until an internal temperature of 160F, about 1 hour and 30 minutes. In an oven preheat to 325F and place roast in roasting pan with rack. Roast for 2-3 hrs until an internal temp. of 160F.
After either cooking method remove loin and cover with foil for 15-20. Then slice. Absolutely delicious.
