  1. Cut kernels off corn and place into a large saute pan. Turn stove on high. Combine spice mix and sprinkle onto corn. Turn corn with spatula. Add pepper, onion and garlic. Stir every few minutes. Once corn starts to stick, poor beer as needed into the pan and stir. Cook for 20 minutes until corn is dark with blackened marks and other vegetables are soft. Remove from heat and add cojita cheese. Serve. Add cooked bacon if desired. Garnish with Cilantro or green onions.
