Remove the hard back to the slab of salt pork. Dice fine. Dice onion. Heat the olive oil in your skillet and add the salt pork - let cook until it starts to turn brown. Add onions and cook until soft and the salt pork starts to crisp. Drain off excess grease. Add the Rotel tomatoes and crushed tomatoes. Add garlic powder and pepper to taste. Let simmer while you cook your pasta. You should not need salt to the sauce, but taste and add accordingly.
