Michele's Simple yet AMAZING chicken salad

"My cousin would always make this when she would come stay with us- it is a simple chicken salad with a sweet surprise that is done in minutes! I like to serve this with crackers or in a sandwich. I hope you enjoy!"

  1. Drizzle 1-2 tbsp of olive oil into a hot skillet. Season chicken with salt and pepper. Cook about 8-10 mins on each side on medium heat or until done. (You can also grill, roast, poach this chicken or use your preferred method.)
  2. Let the chicken cool and give it a rough chop.
  3. Add to food processor (or chop by hand) along with mayo, cilantro, pepper, onion, lime juice and olive oil. Pulse a few times, add salt and pepper to taste
  4. Remove mixture to a large bowl and fold in grapes.
  5. Eat with crackers or make a sandwich.It is best when cold. Enjoy!
