  1. Place bulghur in microwave safe dish. Pour 3 cups boiling water over the bulghur. let sit until all the water is absorbed. (see footnote)
  2. Place oil, lemon juice, onions, cumin, and herbs into food processor. Blend until parsley and mint are chopped.
  3. Combine dressing, feta, and bulghur. Refrigerate.
  4. When ready to serve, toss in cucumbers and tomatoes. (see footnote)
