  1. Cook potatoes for 20 to 25 minutes until tender.
  2. Drain and slice thin.
  3. Preheat oven to 375 degrees.
  4. Combine cottage cheese, egg and pepper.
  5. Coat a shallow 9 inch casserole or pie pan with oil.
  6. Place 1/3 of the potatoes in a single layer on the bottom.
  7. Top with 1/2 the cottage cheese mixture.
  8. Sprinkle with 1/3 of the Cheddar cheese and green onions.
  9. Add another 1/3 of the potatoes.
  10. Add remaining cottage cheese mixture.
  11. Add remaining 1/3 of the potatoes.
  12. Sprinkle with remaining Cheddar and onions.
  13. Bake uncovered for 30 to 40 minutes until golden.
