Roasted Garlic Mashed Potatoes with Asiago and Feta Cheeses

  1. Preheat oven to 350 degrees.
  2. Cut the top from the Garlic Head to expose the cloves.
  3. Set in the center of a 10-inch square of foil and drizzle with Olive Oil.
  4. Bring up sides of foil and crimp top to seal.
  5. Place on a baking sheet snd bake 30 minutes or until Garlic has softened.
  6. Place Potatoes in a large pot, cover with water and salt lightly.
  7. Bring to a boil then reduce heat slightly and boil 30 minutes, until Potatoes are tender.
  8. Remove Garlic from oven and cool slightly.
  9. Cut or squeeze Garlic from the peel into a small bowl and discard peel.
  10. Mash Garlic and set aside.
  11. Drain Potatoes and return to pot to dry slightly and remove from heat.
  12. Add Cheeses and Garlic.
  13. Mash to break up the Potatoes before whipping.
  14. Transfer Potatoes to a mixing bowl.
  15. Add Sour Cream and Butter and whip.
  16. Slowly add in Milk and Stock and whip to your desired consistency.
  17. Season with Salt and Pepper.
