  1. Cut chicken into chunks for skewers. Place in dish to marinate and sprinkle with salt, pepper, and paprika.
  2. In a small bowl, combine red wine vinegar, lemon juice, mustard, Worcestershire sauce, garlic, and basil. Whisk together.
  3. Slowly mix in olive oil until combined.
  4. Pour marinade to cover chicken. Marinate 8 hours or overnight.
  5. Put chunks of chicken onto skewers for grilling. Grill over med-high heat for about 8 minutes on each side until chicken is no longer pink.
  6. Top with crumbled goat cheese when serving, if desired.
