Avocado Casserole Bake

  1. Fix the spanish rice according to directions on package.
  2. Heat oil in saute pan add peppers and garlic, cook until tender (about 5 minutes)
  3. Add black beans and salsa to pan, heat for 5 minutes.
  4. Spray a casserole pan with nonstick spray, cover the bottom of pan with rice and add the pepper and bean mixture on top of rice.
  5. Add sliced avocados on top followed by the rest of the rice.
  6. Finish with adding the cheese on top.
  7. Bake at 350 degrees until cheese melts.

We love this recipe. I have added in different types of peppers, added onion and tried olives too. Everyone in the family love this!
