Sweetened Sweet Potato Mash & Peppercorn-y Scrambled Eggs served over Biscuits and Honey

  1. Boil or bake sweet potatoes and whip up with half of the 1/4 cup of milk and butter. If you are using the pre-made patties, or pre-sweetened canned version, simply heat up and add butter.
  2. Add olive oil to skillet and heat while you crack & whip eggs. Add remainder of milk. Whip until you see a layer of bubbles, and then sprinkle the spices on top of bubbles. DO NOT mix spices into the eggs! The swirls of spices as it falls into the pan really makes the sweet/spicy flavors pop! Each bite is different!
  3. Cook scrambled eggs to your preferred firmness. I like a light golden brown on my eggs - gives it a better texture. If you would like a more flavorful egg, add spices after you taste test.
  4. Break open warm biscuits, drizzle with honey, then top with warm sweet potato mash. Add scrambled eggs on top, and press lightly with wooden spoon to settle them into the potato mash.
  5. Top with bacon slices or sausage patties (or even crumbed sausage). This is optional.
