  1. In a large heavy-bottomed soup pot over medium heat, saute onions and garlic in olive oil until softened and they begin to brown.
  2. Add chicken breasts and all other ingredients - canned and dry.
  3. Stir and simmer for 1 hour.
  4. Remove chicken breasts. Shred chicken with two forks and return to pot.
  5. Remove bay leaf. Serve or continue to simmer until reduced even further - up to one additional hour. Enjoy!
